A long time ago while visiting her loving and gentle grandma, a wee toddler wearing her frilly lemon coloured dress tripped over her little white sandals and flew forward into nothing but air, before landing on her tiny soft palms and scuffing her tiny bare knees. Let's face it, with the abundance of celebration food and alcohol every where we look, it's easy for many of us to use Christmas as our once-a-year excuse to overindulge. In fact, it's kind of an accepted and expected part of Christmas day. Stuff yourself until you're so full that you fall asleep in the afternoon! That wall we hit mid afternoon is often because we've driven our glucose levels so high at lunchtime, that when they come crashing down we feel sleepy and tired from what's called an 'insulin' hangover. This is my basic nut milk technique, yet you can use either other nuts such as hazelnuts or almonds as well.
Thorough soaking is necessary to release the anti-nutrients found in the skin of nuts, that prevent proper digestion and absorption of nutrients. Phytic acid binds minerals preventing them from being properly absorbed however by proper preparation and a little extra time you can 'activate' nuts and seeds reducing phytic acid and increasing nutrient availability.

Add to this hazelnut nut milk, and it becomes a richly divine chocolatey treat, perfect for coughs and colds in winter when served hot, or it's cooling in summer when made with ice.
You can also change this versatile recipe to Jaffa by using orange oil instead of peppermint, or make a Hot Chilli Chocolate by omitting the peppermint with a pinch of cayenne pepper.
